This is a very simple and healthy recipe for red velvet doughnuts made with raspberries and beetroot. Satisfy your sweet tooth with good-for-you ingredients!
Fresh beetroot is used for colour and flavour. It is very sweet and adds a lot of nutrients and moisture to desserts. Beetroots are extremely healthy! Loaded with fibre, alkalising minerals, and vitamins A, B and C, they have been shown to have antioxidant, anti-inflammatory, and detoxification qualities. Also, recent health claims suggest beetroot can help lower blood pressure, boost exercise performance and prevent dementia.
Ingredients
For the doughnuts:
1½ cups almond meal
1 cup cashews
½ cup coconut flour
½ cup cacao powder
½ cup 100% pure maple syrup
¼ cup freshly grated beetroot
2 tablespoons flaxseed
A pinch of sea salt
For the icing:
½ cup cashews
2 tablespoons agave syrup
4 tablespoons coconut oil
1 tablespoon dried raspberries
2 teaspoons grated beetroot
2 teaspoons lemon juice
½ teaspoon vanilla extract

Doughnuts
Blend all of the ingredients in a food processor till combined
Shape the mixture into balls then slightly flatten the mixture on a flat surface and use an apple corer to remove the centre.
Icing
Blend all ingredients in blender till smooth.
Transfer mixture into a small bowl and dip the doughnuts into icing.
Don’t forget to decorate! We used a bit of desiccated coconut and it's delicious!
